I have another of my favourite easy-peesy cookie recipes for you guys….cause you should know by now how I feel about cookies. This week I am hooking you up with Oreo Peanut Butter Cookies – what is better than a cookie? A cookies with a cookie in it of course.
Peanut Butter cookies are my favourite cookies because of the gorgeous subtle nutty taste you get from the peanut butter. These ones are special tho because when you add lush big chunks of white and milk chocolate you get lovely bursts of smooth creaminess. Then add to that the crunch of an Oreo cookie, it just makes of a taste sensation.
These cookies are so insanely good the day you baked them, don’t get me wrong they are great for the next few days too. But those first few hours after they have just been cookied they are utterly heavenly and are virtually impossible to resist.

190g Plain Flour
1/4 tsp Salt
1/2 tsp Bicarb of Soda
115g Unsalted Butter
150g Dark Brown Sugar
50g Granulated Sugar
190g Smooth Peanut Butter
1 Large Egg
1 tsp Vanilla Extract
1 tbsp Milk
100g Good Quality White Chocolate
100g Good Quality Milk Chocolate
Preheat oven to 175C.
In a bowl measure out the Flour, Salt and Bicarb of Soda and set to one side for now.
Chop the white chocolate and milk chocolate into nice chunks and break the Oreos into pieces, put into a bowl and set aside for later.
In a large mixing bowl combine the Butter, both Sugars and the Peanut Butter using an electric hand held mixer until everything is well combined and creamy.
To the mixture add the Vanilla Essence, Egg and Milk mix again until until everything is well combined.
Gradually add the flour to the mixture, using a wooden spoon fold the flour into the mixture until all the flour is combined and a soft dough is formed.
Add the oreos and chocolate to the dough and mix with a wooden spoon until distributed through the dough.
Scoop a tablespoon size of dough and gently roll into a ball then place on a baking sheet. Using a fork press it down slightly. Be sure to leave plenty of room on the baking sheet for the cookies to spread while cooking.
Bake for 9-10 minutes until the cookies are just starting to brown.
Remove from the oven and allow to cool before you scoff the lot!
