I did have plans to bake something different, but unfortunately I ran out of time and had to opt for a quick and easy cookie recipe instead. I have no issue with this tho because it merges two of my great food loves together Cookies and Mint M&M’s

You guys should know by now how I feel about mint M&M’s – they’re without doubt one of my favourite sweeties….I binkin’ love them and want to eat them at any given opportunity.

With this basic chocolate cookie recipe I decided to pimp it out with some chopped up After Eights too since I have a box still in my treat drawer left over from Christmas. I’m just as shocked as you are that Chocolate has survived in the Penthouse that long – it’s a little mind boggling!

The addition of the after eights gives the cookie a seriously minty flavour and makes for an incredibly soft gooey irresistible texture. Be warned, because of the minty filling the cookies do like to stick to the baking tray, just take it easy with a fish slice and they should come off with a little coxing.

If you want a more subtle mint flavour you could easily leave the After Eights out…but I am a mint fiend and always think – the Mint the Merrier!! (Boom Boom)

INGREDIENTS:

200g Plain Flour
25g Cocoa Powder
1 tsp Baking Soda
1/4 tsp Salt
120g Unsalted Butter at Room Temperature
150g Dark Brown Sugar
50g Granulated Sugar
1 Egg
1 tbsp Milk
2 tsp Vanilla Extract
1 Box of AfterEights
2 Packets of Mint M&Ms

In a bowl mix together the flour, cocoa powder, baking soda, and salt, then set to one side

In a large mixing bowl beat the butter with a hand held mixer until it is light and creamy. Add the sugars to the whipped butter and mix again until well combined.

To the butter mixture add the egg, milk and vanilla extract. Give this a good mix together.

Add the flour mixture into the butter mixture and slowly using a wooden spoon combine the two together. Be careful not to over mix, just mix until all the flour is fully combined.

Add to the dough 18-20 After Eights which have been chopped up into quarters and using a wooden spoon mix until they are evenly distributed.

This mixture will feel softer than most cookie doughs – don’t worry about it.

Cover the bowl with cling film and pop in the fridge for at least an hour.

Once the dough is chilled Preheat oven to 175C.

Scoop approx 1.5 Tablespoons of dough and using your hands lightly roll the dough into a ball, and place on a baking sheet. Be sure to leave room for the cookies to spread.

Bake each batch for 10-11 minutes. You may think the cookies are under done when you take them out but you want them to be soft, they will firm up as the cool so don’t over bake them. As soon as you remove them from the oven lightly press some mint M&Ms into the cookie…this must be done straight away before they starts to cool.

Leave the cookies to cool on the baking tray before enjoying these seriously minty cookies.
