Peanut Butter and Rolo Brownies

I fancied doing something with peanut butter this week, which is probably the ingredient I like using most in baking. My initial thought was some cupcakes but then I decided in the end that a brownie might be quite tasty.

Whenever I bake anything I’m always looking to take things up a notch, never one to just chuck some chocolate in I always want to add something that will make the recipe more interesting and drool worthy. I started rummaging around in my sweetie drawer and found some Rolos that I thought would work amazingly well with the peanut butter.

The good news is I was right they work brilliantly well together…was there ever really any doubt?

The brownie was amazing slightly warm straight from the oven – I enjoyed my first piece with some of my favourite Equis Nutty Double Caramel Ice Cream which was just divine.Peanut Butter Brownie Recipe

Once cooled they’re thick, chewy and taste brilliant. The brownie is sweet and nutty in taste, and it’s dense and heavy in texture. The rolos give lovely little pops of chewy caramel and chocolate. It’s basically a perfect fudgey treat.

This is a fast and simple recipe to follow and if you love brownies you are going to love these.


115g Unsalted Butter
130g Smooth Peanut Butter
300g Light Brown Sugar
2 Large Eggs
½ tsp Salt
250g Plain Flour
1 tsp Baking Powder
4 Packs of Rolos

Pre-heat the oven to 175C and line a 9×9 inch cake tin with greaseproof paper and set to one side for now.

In a bowl measure out the flour, salt and baking powder.

Melt the butter in a medium/large pan over a low to medium heat. Once just melted remove from the heat. Add the peanut butter and brown sugar to the butter and beat them well together using a wooden spoon.

Add the eggs to the butter mixture one at a time, beating well after each egg has been added.

Add the flour mixture to the pan and using a wooden spoon mix until the flour is just combined and no more, be careful you don’t over mix. The mixture will be incredibly thick and pasty – don’t worry about it. It’s meant to look like that

Add the rolos and mix until they are evenly distributed.

Pour the mixture into the pre-prepared pan and place in the oven. Bake for 15 minutes, then cover with some aluminum foil and bake for another 15 minutes before removing from the oven.

Allow to cool in the tin before enjoying.
