Banana & Nutella Loaf
I have the perfect banana loaf recipe for you, it’s easy and requires minimal ingredients. Feel free to leave out the Nutella if you don't have any...but if you ask me it is the Nutella that makes it
Ingredients
115g Unsalted Butter at room temperature
115g Caster Sugar
1 Egg at room temperature
3 Ripe Bananas
230g Self-Raising Flour
Nutella – As required
Method
Step 1: preheat your oven to 185oC. Peel and chop up the bananas. In a bowl using a fork smash-up the chunks of banana until they become like a slightly lumpy puree.
Step 2: In a large mixing bowl cream together the butter and sugar.
Step 3: Add the egg and mashed banana, using a wood spoon mix until well combined.
Step 4: Sieve the flour into the batter and mix again using the wood spoon until just combined.
Step 5: Line a loaf tin with greaseproof paper. Fill the tin with half the batter and add some splodges of nutella, pour the rest of the batter in to cover the nutella. Once the batter has been roughly smoothed out place some more dollops of nutella on top, then use a clean knife gently swirl the nutella into the cake batter.
Step 6: Place in the pre-heated oven for 35 minutes. Check the cake is cooked by inserting a long thin skewer into the loaf – if the cake is ready the skewer should come out of the cake clean. If the cake is not cooked, repeat this process every 5 minutes until you get a clean skewer. Then remove from the oven and allow to cool
